Sugar-free Carrot and Date Balls

Super-quick easy bites with the goodness of carrots and flavours of dates and spices. This dish is sugar-free and healthy and works well as an after school snack for kids.

Here's what you'll need

Carrots: 2 cups (grated)
Dates: 1 cup (chopped)
Tea Biscuits: 10-12 nos.
Honey: 1 tbsp
Cinnamon powder: 1/4 tsp
Nutmeg: 1/4 tsp
Vanilla extract: 1/2 tsp
A pinch of salt
Desiccated coconut and almond slivers for garnish

How do you make it?

Using a food processor finely chop the carrots. In a pan, sauté them until soft and well cooked. Set aside to cool.

Blend the dates to form a smooth syrup (Use water if needed to get the right consistency). Now add the carrots, tea biscuits, honey, vanilla extract, nutmeg, cinnamon and salt to the food processor and blend until well combined. Sugar can be added if preferred.

Remove the mixture from the food processor to a bowl and roll out balls about 1” in diameter. Refrigerate for 2-3 hours before serving. Garnish with coconut and almond slivers.
