Flattened rice dessert (Aval Puttu)
Aval or more commonly known as Flattened rice is a very healthy ingredient and is easily digestible. This is an indian dish made with rice and cane sugar is more often prepared during festivals and as a devotional offering made to a god. It can also be a simple, easy to make, yet delicious dish for those sudden carb cravings.
Here's what you'll need
Flattened rice: 1 cup
Indian Jaggery: 1 cup (grated)
Coconut: 4 tbsp (grated)
Coconut: 4 tbsp (grated)
Clarified butter(ghee): 2 tsp
Cardamom powder: 1 tsp
Water as needed
Water as needed
Roasted cashews and raisins for garnish if needed
How do you make it?
Slightly dry roast the flattened rice on a skillet pan and grind it in a food processor coarsely.
The rice needs to be moistened with a bit of water. Sprinkle about a teaspoon and add more until it is soft with no lumps
When the mixture starts boiling, remove it
from the flame and sieve it, to remove the dirt if any.
Now add the mixture to
the same pan and bring it to low heat.
Add the grated coconut and keep stirring till the
mixture starts to thicken. When dropped into cold water the sauce should form small pellets.This means the sauce is ready.
Add the rice slowly and keep stirring
continuously to avoid forming any lumps.When it is thoroughly mixed,
add butter and cardamom powder.
Mix well and garnish with roasted cashews and raisins.
